Zucchini Pasta Casserole Recipe
Ingredients:
2 c of Cheddar; shredded
4 c of pasta (spiral)
1 tsp of pepper flakes (red)
4 Tbsps of soy
2 cans of tomatoes (28 ozs); diced
2 tsps of garlic; minced
2 c of zucchini; minced
1&1/2 c of onions; sliced
1 lb of grounded beef
Instructions:
Preset oven (375 degrees F). Butter down a baking pan. Saute meat in garlic and zucchini. Cook ’till beef is no longer pink and the vegetables become fork tender. Remove excess oil.
Mix pasta in. Using another container, combine the tomatoes, soy and pepper. Add to the meat mixture. Transfer to a baking pan then bake for twenty minutes, covered.
Sprinkle cheese over top then place back to the oven in order to melt cheese.
