Zucchini Casserole Recipe
Ingredients:
1/2 c of butter (unsalted)
2 c of crackers (Chicken-in-a-Biskit); crushed
4 c of zucchini; peeled and shredded
2 c of shredded cheese (Mozzarella)
1/4 c of onions; chopped
2 pcs of beaten eggs
Salt & Pepper
Instructions:
Melt the butter then add the crumbs then spread one-half of the mixture onto the base of a 9-inch baking dish. Combine onions, zucchini, and Mozzarella; season salt & pepper then spread onto the crumbs.
Place the rest of the crumbs above and bake (350 degrees F) for half an hour.
