Zesty Bean and Rice Casserole Recipe
Ingredients:
1 c of cheese (low fat mozzarella)
1 can of tomoatoe (16 ozs); reserve liquid
2 cans of beans (kidney, 16 ozs); reserve liquid
3/4 c of rice (uncooked)
2 pcs of bell peppers (green); minced
1&1/2 c of mushrooms (fresh); sliced
2 cloves of garlic; minced
1 pc of onion (large); minced
1/2 c of water
1 Tbsp of olive oil
Instructions:
Preset oven (350 degrees F). Saute onions, mushroom, peppers and garlic. Simmer for ten minutes ’till onions run clear.
Mix in the rice, tomatoes, hot powder, chili sauce and beans. Cover then simmer for twenty five minutes ’till rice has become tender.
Decant to a two quart baking pan. Layer cheese on top. Bake for fifteen minutes.
