West of the Pecos Casserole Recipe
Ingredients:
1 pack of noodles (12 ozs); cooked then drained
1 can of tomatoes (1 lb)
1 can of chiles (1lb)
1 can of corn (cream style)
1 container/can of tomato soup
1/4 c of Worcestershire sauce
2 tsps of chili powder
1 can of mushrooms (6 ozs); sliced
1 pc of bell pepper; minced
1 pc of onion (large); minced
2 lbs of grounded beef
1/2 c of butter
Instructions:
Saute beef, mushrooms, pepper, chili hot powder, onions. Season with pepper and salt with Worcestershire sauce. Cook ’till meat has nicely browned.
Add the soup, tomatoes and corn then simmer half an hour. Mix in the noodles then decant to a baking dish. Bake for an hour (325 degrees F). Good for a dozen persons.
