Vegetarian Casserole Recipe
Ingredients:
1 tsp of cilantro; chopped
1/2 c of soured cream
1 can of beans (16 ozs); re fried
8 pcs of tortillas (corn, 8 inch diameter)
1 c of Monterey jack; grated
1 c of salsa type catsup
1 can of corn kernels (10 ozs); drained
1 pc of onion; minced
1 pc of bell pepper (green); minced
1/2 tsp of broth (chicken)
2/3 c of rice
Instructions:
Cook rice. Heat the broth inside a stock pot. Add the onions and bell peppers ’till they are fork tender. Turn off heat. Add the corn kernels plush the catsup then mix in the rice.
Add cheese in it. Spread the re-fried beans onto the tortillas then scoop half a cup of rice in the middle of the tortillas. Roll the tortillas up and seal all edges then transfer to a baking pan.
Decant remainder of the catsup over the tortillas then pour soured cream over. Bake for half an hour (400 degrees F). Good for eight persons.
