Vegetable Tortilla Casserole Recipe
Ingredients:
1 & 1/2 c of cheese (American)
6 pcs of tortillas (corn); sliced into triangles
2 c of soured cream
2 Tbsps of flour
1/2 tsp of cumin
1&1/2 c of Monterey jack
1 container/can of chiles (green); minced
1 pc of onion; minced
1 pc of bell pepper (green); minced
4 pcs of zucchini (medium); sliced thinly
2 Tbsps of oil (vegetable)
Instructions:
Saute all vegetables for five minutes. Add the cumin and chiles. Mix in the flour plus one cup soured cream.
Place the tortillas at the base of your baking dish. Scoop half the amount of your vegetables then half cup of your soured cream then half a cup of your cheeses.
Do the same until all ingredients are used. Bake for half an hour (350 degrees F).
