Summer Vegetable Casserole Recipe
Ingredients:
2 Tbsps of butter
1 Tbsp of muscovado sugar
1/4 tsp of pepper
1/2 tsp of salt
2 pcs of tomatoes (large); cut into wedges
1 pc of onion (large); cut into wedges
3 pcs of squash (yellow); cut into circles
3 pcs of zucchini; cut into circles
3 Tbsps of rice
Instructions:
Lightly grease a two quart baking dish. Plac the uncooked rice at the base then layer with all the vegetables. Make sure to season per layer with pepper, salt and sugar.
Cut small squares of butter then place over the vegetables. Put a lid on then bake for an hour (325 degrees F).
