Tomato, Potato and Pepper Casserole Recipe
Ingredients:
1/2 tsp of salt
1/2 tsp of pepper
1/2 tsp oregano
2 tsps of garlic; minced
2 pcs of tomatoes (large, ripe); thinly sliced 1/4 inch
2 pcs of bell pepper (red, yellow or green); thinly sliced 1/2 inch
2 pcs of potatoes (large); cut into strips
1/4 c of olive oil
Instructions:
Preset oven (375 degrees F). Pour one tablespoon oil at the base of your baking pan, spreading evenly. Place a layer of potatoes, then one and one fourth cups pepper then one and one fourth cups tomatoes.
Pour a tablespoon oil and spread again along the mixture. Dust with one teaspoon of garlic with one fourth teaspoon of oregano, pepper then salt. Repeat the procedure until all ingredients have been used.
Bake for fifty minutes ’till all vegetables have become fork-tender.
