Tamale Pollo Casserole Recipe
Ingredients:
1 c of cheese (Cheddar)
1 can of chiles (4 ozs); drained & chopped
1 container/can of corn (whole kernel); reserve liquid
1&1/2 c of chicken; cooked and chopped to bite sized pieces
1 can of chili (10 ozs, no beans)
1 can of tamales (15 ozs)
1 c of chips (corn); crushed finely
Instructions:
Layer chips at the base of your baking pan. Remove the wrapping around the tamales the layer over the chips. Mix together chili, chicken, corn and green chiles.
Scoop over the tamales. Pop in the oven twenty minutes (350 degrees F). Layer cheese on top then bake five minutes to melt cheese. Serve alongside soured cream.
