Tamale Hash Recipe
Ingredients:
Cheese (Cheddar); shredded
Soured cream or cream
Tomatoes; diced
Scallions; minced
Chili sauce (red or green); heated
4 whole eggs
8 pcs of tamales; cut to bite sized pieces
1 pc of onion (medium); minced
3 Tbsps of vegetable oil
4 Tbsps of butter
Instructions:
Melt oil and butter in a large skillet. Saute onions and tamales until onions become tender. Simmer for three minutes.
In a separate skillet, pan fry all eggs. You can prepare it scrambled or sunny-side up. Scoop tamale and onion mixture to serving platters. Place each egg on top then decant chili sauce.
Garnish with tomato, soured cream, cheese and scallions. Serve right away. Good for four persons.
