Tamale Casserole Recipe II
Ingredients:
1 c of cheese (Cheddar)
1 container/can of corn (whole kernels)
1 container/can of olives (ripe); pitted
1 canned tomatoes (1 lb)
1 lb of grounded beef
2 Tbsps of oil
1/2 tsp of oregano
1 whole egg
1 canned chili or enchilada sauce
1 pc of onion (medium); minced
1&1/2 c of milk
3/4 c of cornmeal (yellow)
Instructions:
Combine together the milk, egg and cornmeal in a two quart baking pan. Saute the meat and drain off remaining liquid. Combine the onion, oregano, olives, tomatoes, corn and enchilada.
Simmer 5 minutes then mix in the cornmeal. Stir to combine. Bake for an hour (350 degrees F). Layer with cheese then return to oven to melt cheese.
