Taco Pasta Casserole Recipe
Ingredients:
2 c of Cheddar; grated & divided
1 jar of salsa (11 ozs)
2 cans of tomatoes (stewed, 14.5 ozs)
1 box of pasta shells
1 pc of jalapeno pepper; seeds removed then minced
1 pc of onion (large); diced
1 Tbsp of butter
1 pack of seasoning (taco)
1 lb of grounded beef
Instructions:
Saute beef until browned then remove excess fat. Season with taco mix then remove from heat then set it aside. Saute the onions using butter ’till clear and soft. Mix onions with beef.
Meanwhile, prepare pasta as per package instructions. Remove all water. Combine with beef mixture then season with pepper, tomatoes, the salsa then half the amount of your cheese.
Decant mixture to a lightly greased baking pan. Layer remainder of the cheese then bake for half an hour (375 degrees F). Good for eight persons.
