Sweet Sausage Frittata Recipe
Ingredients:
1/4 c of cheese (Parmesan); shredded
1/8 tsp of oregano (dried)
1/8 tsp of basil (dried)
1/8 tsp of pepper
1/2 c of milk
4 whole eggs
1 c of mushrooms (fresh); sliced
1 small zucchini; sliced thinly
8 ozs of sausage (Italian, sweet); remove casings
1/4 c of onion; diced finely
Instructions:
Using a nine inch skillet saute sausage and onion using moderate heat. Mix to split up sausage. Drain off excess fat. Mix in the zucchini then the mushroom and cook ’till zucchini has become fork tender.
Whisk eggs, salt, milk, basil, oregano and pepper. Decant egg mixture over the cooked sausage. Continue cooking whilst tilting the pan sideways to let the egg seep into the spaces and cook.
When the eggs have cooked and set, grate cheese on top of the frittata. Transfer to a serving dish and slice into four triangles. Good for four persons.
