Steak Rancheros Recipe
Ingredients:
1/4 c of peppers (green); seeds removed, sliced into one inch thin strips
6 ozs of potatoes; cleaned & sliced into 1/4 inch thick strips
2 tsps of cilantron (fresh); minced
1 c of tomatoes (Italian, canned); drained, seeds removed & chopped, keep liquid
2 cloves of garlic; diced
1/2 c of onion; diced
2 tsps of olive oil
1 boneless steak (chuck, 10 ozs, half inch thick slab)
Instructions:
Broil chuck steak, making sure all sides are charred but still rare, for about three to four minutes per side. Remove to a large baking dish then set it aside.
Saute garlic then onion ’till onions are soft and clear. Add the canned tomatoes, cilantro then the tomato liquid then cook for five minutes.
Place the slices of potato in the baking dish with the chuck steak. Decant the tomato then layer with chilies on top. Place a cover then pop in the oven for twenty five minutes (350 degrees F).
After twenty five minutes, take off the cover then continue baking until meat becomes tender with the potatoes nicely charred.
