Squash Casserole Recipe III
Ingredients:
Butter
Crackers (round, butter); crumbled
1&1/2 c of cheese (Cheddar)
1 tsp of salt
3 Tbsps of sugar (brown)
1/2 c of milk
6 Tbsps of butter
1/2 – 3/4 onion (medium); diced
2 whole eggs
2 lbs of squash
Instructions:
Boil the squash until fork tender. Remove all water then mash up. Using another bowl, whisk up the eggs.
Saute the onions in butter then add the eggs, squash, milk, sugar then salt. Mix thoroughly. Place a portion of crumbled crakers at the base of your baking dish. Then top off with cooked squash then some cheese.
Do the same procedue until all ingredients have been used ending with crumbled crackers on top. Place little squares of butter on top then pop in the oven, without cover, for forty five minutes (350 degrees F).
This dish may be placed in the freezer then reheated.
