Spicy Baked Ratatouille Recipe
Ingredients:
3 pcs of tomatoes; quartered
3 pcs of peppers (bell, large); de-seed & sliced thinly
3 pcs of onions (large); skins removed & sliced thinly
4 pcs of zucchini; sliced
Parsley (fresh); chopped
Olive oil
4 pcs of eggplants; sliced
Freshly cracked black pepper
Salt
1 pc of Laurel leaf; crumbled
2 cloves of garlic; skins removed & minced
1 tsp of cumin powder
2 tsps of coriander powder
Instructions:
Mix together cumin, coriander, Laurel leaf, garlic, pepper and salt. Set it aside. Place the eggplant slices at the base of your ramekin. Season with the homemade mix, olive oil then sprinkle some of your parsley.
Next layer the zucchini, onions, peppers then tomatoes, making sure that you season with the homemade mix, olive oil then parsley after each of your vegetable layer. Bake half an hour, covered (400 degrees F).
Remove the lid or cover then bake half an hour more ’till vegetables become tender and can be pierced with fork. May be served cold or hot.
