Sonora Chicken Casserole Recipe
Ingredients:
1 c of cheese (Monterey jack, 4 ozs); grated
2 Tbsps of soured cream
3 c of turkey or chicken breasts; cut into bite sized pieces
1 can of corn (whole kernels, 7 ozs); drained
1 jar of salsa (12 ozs); divided
1/4 c of butter
1 c of water (hot)
1 pack of store-bought turkey stuffing mixture (6 ozs)
Instructions:
Preset oven (325 degrees F)
Mix together your seasoning mix, butter and water inside your nine inch baking dish. Add the stuffing mixture and half a cup of salsa. Mix to dampen the crumbs.
Next add the corn and chicken or turkey breast cutlets. Using a separate bowl, combine together soured cream and salsa. Decant over the meat then top with the Monterey jack.
Bake half an hour until set. May be served alongside more soured cream should you wish.
