Shrimp-Rice Casserole Recipe
Ingredients:
1 pc of onion; chopped finely
1/2 sweet pepper (green); chopped finely
1 pc of celery stalk; chopped finely
3 c of rice (cooked)
1 regular can of soup (cream of mushroom)
1/2 regular can of milk
1 pack of shrimp (12 ozs, frozen); cooked & chopped finely
1/2 c of cheese (Cheddar); grated
Instructions:
Saute sweet pepper, celery and onion w/ small amt oil. Then, take out skillet away from the heat. Meanwhile, dilute soup w/ milk in separate bowl. Next, add in rice, shrimp and pour in bowl of soup into the pan.
Place mixture into a deep dish greased w/ butter. Top w/ cheese. Bake w/o cover over 300 deg F about an hr.
