Shrimp Artichoke Casserole Recipe
Ingredients:
1 can of artichoke hearts (14 ozs); drained & each cut into 4 equal parts
1/2 c of margarine
1 lb of shrimp (headless); peeled
1/4 c of flour
8 ozs of mushrooms (fresh); cut into pcs, or
A can of mushroom pcs (8 ozs)
1 c of half-and-half
3 ozs of cheese (Monterey-jack); cut into cubes
1/2 c of milk
1 tsp of salt
Half a tsp of pepper
Paprika
1/4 c of Sherry (dry)
1/2 tsp of Worcestershire
Instructions:
Place the artichokes in base of deep dish (1.5-quart). Melt the 1/4 c of margarine into skillet; saute shrimps ’til done. Then, using a spoon w/ wholes, remove shrimps then layer onto the artichokes. Add mushrooms into margarine; saute for 6-8 mins.
Again w/ the use of the same spoon, remove mushrooms and spread on top of shrimps. Melt last cup of margarine into skillet. Put in the flour then constantly stir. Gradually pour milk and half-and-half then cook ’til it thickens.
Add cheese then stir ’til cheese melts. Add pepper, salt, Worcestershire and sherry then stir ’til smooth. Next, pour onto casserole then sprinkle w/ paprika. To finish, bake w/o cover at 350 deg F about 25 – 30 mins ’til bubbly; makes 6 servings.
