Seafood Casserole Recipe
Ingredients:
1 lb of imitation meat of crab
1/2 lb of small shrimps; cooked & frozen
10 ozs of peas; frozen, thawed & drained
2 Tbsps of parsley; freshly chopped
1.5 c of rice (white); cooked
1/4 c of pepper (green); chopped
1 tsp of tarragon; dried
1 c of sour cream (reduced-fat)
1/4 c of cheese (Parmensan); shredded
Instructions:
Preheat the oven (350 deg F). Mix all the ingredients together but the Parmesan. Add pepper and salt to season. Spoon in to a baking pan then top w/ Parmesan. Bake about 45 mins.
If more flavor is preferred, try to put in a little hot chili sauce, a Tbsp of juice (lemon) of 1/2 c of asparagus (chopped). Thyme can also be used in place of tarragon.
This dish can also be topped w/ crumbs (bread)
in garlic flavor.
