Sauerkraut and Dumplings with Ribs Recipe
Ingredients:
3 lbs of pork (spare-ribs or country)
2 lbs of sauerkraut put inside clear bags
Peppercorns (black)
1 tsp of caraway fruits; optional
1 – 2 laurel leaves
1 c of flour
A dash of salt
A dash of pepper
1 tsp of salt
2 pcs of potatoes (medium)
1 pc of egg (medium)
Instructions:
Wash pork then cut into serving-size pcs. Soak into water w/ a little salt. Next, drain then dry on paper-towel. Rinse the sauerkraut into a big strainer w/ hot water from the faucet then squeeze sour-tasting liquid out.
Place meat, seasonings and sauerkraut into a big pot then cover with water; bring it to boil. Slowly cook about 2 – 3 hrs or use crockpot or slow-cooker. Place an egg into blender.
Meanwhile, cut up potatoes into small pcs then drop potatoes one by one into the opening of the blender. Once potatoes become ground, put in flour along w/ salt; mix well.
While hands are damp, form it to small walnut-size balls then drop in to simmering mix. Cook approximately 15 mins.
Before dumplings are dropped, the meat could also be taken out and set aside to keep warm. Before it is served, remove the peppercorns and laurel leaves. Best when served w/ bread (rye) w/ butter.
