Salt River Skillet Meal Recipe
Ingredients:
2 Tbsps of shortening
1 lbs of beef (ground)
2 pcs of garlic cloves; minced
6 ozs of vermicelli; roughly broken
2 pcs of onions (small); sliced thinly
1 sweet pepper (green); chopped finely
4 pcs of celery stalks; sliced thinly
1 c of corn (whole-kernel)
2 tsp of salt
2 tsps of chile powder
3/4 c of water
1/2 tsp of pepper
1 regular can of tomatoes
1 pack of cheese (American, 8 ozs) slices
Instructions:
First, melt the shortening into a skillet. Saute vermicelli (dry) ’til lightly brown, occasionally stirring.
Add the beef then cook ’til meat will lose red color and stir constantly. Blend in garlic, onions, sweet pepper, celery, corn, pepper, salt and chile powder.
Add the tomatoes along w/ water and gently stir. Cover then simmer about 25 mins. Place the slices of cheese over the mixture.
To finish, cover then cook for 5 mins or ’til cheese melts. Makes 8 servings
