Quick Mex Casserole Recipe
Ingredients:
2 regular cans of tamales
3 c of Fritos
1 onion (large); chopped
1 c of cheese (Cheddar or Monterey-jack); grated
2 regular cans of chili
2 c of chips (corn); lightly crushed
Instructions:
Spread the chips in base of a 2-quart deep dish. Arrange the tamales on them. Then, layer w/ the onions and pour chilli on it. Top w/ the rest of chips along w/ the cheese and bake over 350 deg F about 25 mins; good for 4 – 6 servings.
