Quiche-Stuffed Peppers Recipe
Ingredients:
2 sweet peppers (red, large, 3/4 lb)
2 sweet peppers (green, large, 3/4 lb)
2 Tbsps of margarine or butter
1 onion (medium); chopped
1/2 c of ham (1/4 lbs); boiled & chopped
2 Tbsps of flour (all-purpose)
1/4 tsp oregano (dried)
Pepper
2 pcs eggs (large)
1 c of half-and-half
1/2 c of cheese (Feta, 3 ozs); crumbled
Instructions:
Remove each stem (w/ 1 inch pepper surrounding it) from every pepper carefully. Chop the pepper taken out with stems into about 2 Tbsps; set it aside. Without breaking the peppers, remove seeds and ribs; discard. Stand every pepper into microwave-safe muffin-pan cup and set them aside.
Into a separate glass mixing bowl, heat butter in microwave for half a second over HIGH power. Add pepper (chopped and reserved earlier), ham and onion; microwave over HIGH power about 3 mins or ’til onion becomes tender, while stirring every after one and a half mins.
Blend in oregano, pepper and flour ’til smooth. Slowly stir the half-and-half and beat into eggs then stir 1/3 c of cheese (Feta) in. Spoon mixture into pepper-cups, evenly dividing; microwave over HIGH power around 4 mins.
Sprinkle w/ remaining cheese. To finish, microwave over MEDIUM power for 10 – 12 mins or ’til just set, while rotating pan 1/4 turn after every three mins. Serves 4.
