Oyster Casserole Recipe
Ingredients:
A pint of shucked oysters (large); drained
1/2 c of half-and-half
1/2 c of margarine or butter; melted
2 tomatoes (medium); chopped roughly
1/2 tsp of salt
2 c of crumbs (from 20 pcs of crackers)
1/2 tsp of cumin (ground)
1/4 tsp of allspice (ground)
1/8 tsp of pepper (red, ground)
Lime or lemon; wedged
Instructions:
Combine tomatoes and oysters then arrange into an ungreased baking pan (11 by 7″). Pour in 1/4 c of half-and-half onto mixture. Then mix all the other ingredients but the rest of half-and-half and the wedges; sprinkle them on the tomatoes and oysters.
Pour the rest of half-and-half on the crumb mix. Bake without cover over 375 deg F ’til light-brown for half an hour. Garnish w/ wedges (lemon or lime); makes 4 servings.
