Old Dark Casserole Recipe
Ingredients:
1 7-bone steak (1.5 lbs)
2 Tbsps of flour (seasoned)
2 Tbsps of tomato paste
2 Tbsps of oil
1 can of beer (dark, 12 ozs)
2 Tbsps of thyme (fresh); chopped
A dash of salt
1/2 c of stock (beef)
2 pcs of carrots; washed, peeled & chopped finely
2 pcs of onions; chopped roughly
2 pcs of celery stalks; chopped
A dash of pepper
6 pcs of garlic cloves; crushed
8 ozs of mushrooms; divided into two
Instructions:
Cut steak to 1-inch pcs; dust w/ flour. Then heat oil inside a pan; brown meat. Next, transfer meat into a deep dish. Add tomato paste into pan then stir on top of low stove heat ’til it turns dark into a brownish red color. Put in stock, thyme and beer.
Add in garlic, onions, celery, mushrooms and carrots. Season w/ pepper and salt if preferred. Cover then cook over 325 deg F about 1.5 to 2 hrs ’til meat becomes tender. Good for 6; serve w/ winter garden vegetables.
