Nacho Casserole Recipe
Ingredients:
1 lb of beef (ground)
1 c of corn-kernels (fresh, canned or frozen)
2 c of chips (tortilla); crushed & divided
3/4 c of dressing for salad (Miracle Whip
2 c of cheese (Monterey-jack); shredded & divided
A jar of salsa (chunky, 12 ozs)
1 Tbsp of powdered chili
Instructions:
Preheat the oven (350 deg F). Meanwhile, brown beef then drain. Mix in corn, powdered chili, salsa and dressing. Layer half of meat mix, half of chips then half of cheese into a casserole (2 quarts).
Repeat the layers. Then, bake about 20 mins or ’til heated through. Upon serving, top w/ lettuce (shredded) and tomatoes (chopped) when desired.
