Moussaka Recipe
Ingredients:
1 pc of eggplant (large); pared & sliced to 1/2″ pcs
1 lb of lamb or beef (ground)
Canola oil
2 onions (medium); chopped
1 tsp of salt
2 garlic cloves; pressed
2 Tbsps of parsley; chopped
Half a tsp of thyme
Half a tsp of oregano
Half a tsp of nutmeg
1-1/4 c of tomatoes (canned)
1/2 c of wine (white)
2 white of egg
1/2 c of crumbs of bread
2 Tbsps of chees (Parmesan); grated
3 Tbsps of butter
1.5 c of milk
3 Tbsps of flour
1/2 tsp of salt
2 yolks of egg
1/4 tsp of pepper
Instructions:
Sprinkle pared eggplants w/ salt; set it aside about half an hour. Rinse then thouroughly dry. Brown meat into oil w/ garlic and onions. Drain excess fat off.
Add seasonings, salt, tomatoes, wine and parsley. Cover then slowly cook for half and hour; cool. Blend in white of egg still unbeaten and 1/2 of crumbs. Then, brown slices of eggplant into oil.
For the white sauce, melt the butter. Slowly add the flour, constantly stirring; take out from the heat. Stir milk in slowly and return it to the heat then stir ’til sauce gets thick. Beat yolks of egg thoroughly; slowly blend the yolks, pepper and salt into sauce and blend thoroughly.
Sprinkle the base of 13×9-inch baking pan w/ the rest of crumbs and cover w/ eggplant. Next, spoon in meat mix over eggplants. Pour the white sauce on it and top w/ cheese. Bake over 350 deg F around 45 mins.
