Monterey Sunday Supper Recipe
Ingredients:
2 c of rice (cooked)
1 can of chiles (green, 7 ozs); diced
3 pcs zucchini (medium)
2 pcs tomatoes (large)
1.5 lbs of cheese (Monterey-jack); shredded
A tsp of oregano
A tsp of salt (garlic-flavored)
2 c of sour cream
2 Tbsps of sweet pepper (green); chopped
2 Tbsps of scallions; chopped
A Tbsp of parsley
Instructions:
Leach the zucchini then slice thinly. Place the rice into well-buttered deep dish. Cover w/ chiles along w/ 1/2 of cheese. Then, layer the zucchini; top w/ tomato slices.
Combine sour cream w/ oregano, onions, sweet pepper and garlic-flavored salt and then spread on the vegetables. Top w/ the last of cheese and finish off w/ parsley on the topmost.
Bake over 350 deg F about 40 mins. Makes 6 – 8 servings.
