Mexican Tortilla Bake Recipe
Ingredients:
1 lbs of chicken (freshly ground)
1 jar of chunky salsa (medium, 16 ozs)
8 ozs mild cheese (Cheddar); shredded & divided
1/2 c of olives (green, whole); sliced
2 boxes of raisins (1.5 ozs)
A pack of flour-tortillas
A container of sour cream (16 ozs)
Instructions:
Preheat the oven (375 deg F). Then, brown the chicken into a big skillet ’til cooked thoroughly; drain. Put in cheese, olives, salsa and raisins. Cook for 1 min for flavors will blend; constantly stir.
Spoon 2 Tbsps of meat mix into the center of every tortilla. Next, fold then pierce edges w/ a pick made of wood. Then, bake over 375 deg F about 10-15 mins or ’til tortilla edges are golden-brown; cool for 1 min.
To finish, sprinkle every tortilla w/ cheese and a lump of the sour cream then serve.
