Mexican-Style Beef Casserole Recipe
Ingredients:
1.5 lbs of lean beef (ground)
2 Tbsps of canola oil
A pc of onion (medium); chopped
2 packs of chopped frozen spinach (10 ozs); thawed & drained well
1 c of tomatoes; chopped, or
A can of tomato sauce (8 ozs)
1/3 c of chilli sauce
A dash of salt
A dash of pepper (ground fresh)
12 pcs of tortillas (corn); quartered
1/2 c of red sauce for taco
3 c of cheese (Monterey-jack); shredded
1 c of sour cream
Instructions:
Preheat the oven (375 deg F). Brown beef inside a skillet; drain excess fat, take out beef and set it aside. Put in oil into the skillet then saute onons ’til golden and limp.
Put back beef into the skillet then add in tomatoes, salt, pepper and chilli sauce. Dip in tortilla pcs to the sauce for taco; two sides being covered.
Cover the base of buttered deep dish (3 quarts) w/ 1/2 tortilla pcs, overlapping slightly. Spread evenly the beef mix onto the tortillas. Then, sprinkle 1.5 c of cheese on beef .
Next, layer the rest of tortilla pcs over top then spread w/ sour cream. Top w/ spinach then w/ the rest of cheese.
Cover then bake about half an hour and taking out the cover in last fifteen mins of baking. To reheat, deep dish must be room temp before baking over 375 deg F w/o cover ’til bubbly and hot.
