Layered Chicken Enchilada Casserole Recipe
Ingredients:
1 Tbsp of oil (vegetable oil)
1 pc of onion (medium); chopped
2-1/2 c of chicken meat (breast, cooked); shredded
7 oz of canned chiles (green, diced)
1.25 oz of seasoning mix (taco)
8 pcs of tortillas (corn)
15 oz of canned beans (kidney); drained
2 c of shredded cheese (Cheddar)
16 oz of salsa (mild)
Instructions:
Preheat the oven (350 degrees F). Grease 13×9x2-inch baking glass dish. Place oil on a skillet above moderate heat. Cook the onion till tender, while occasionally stirring.
Take out from the heat then add chiles, taco seasoning, and chicken; stir thoroughly. Layer one-half the tortillas on prepared dish.
Place mixture of chicken, beans, then a cup of cheese. Add a layer of the rest of the tortillas. Spread over salsa then the rest of cheese.
Place inside preheated oven and bake, about 30-35 mins or till cheese melts.
