Lake Havasu Casserole Recipe
Ingredients:
1/2 tsp of cayenne
1/2 c of chile (green); chopped
4 c of potatoes (mashed)
1 c of sour cream (dairy)
1/4 c of butter (or margarine)
1 pc of onion (medium); chopped
10 oz of spinach (frozen, chopped); thawed, drained well then squeezed dry
1 c of shredded cheese (Colby)
Salt & Pepper (to taste)
Instructions:
Combine potatoes, sour cream, cayenne, onion, butter, spinach, and chile; mix thoroughly and season salt and pepper. Transfer on a greased baking glass dish.
Spread cheese on top then place inside the oven. Bake (350 degrees F) for twenty mins.
