Italian Pancake Lasagna Casserole Recipe
Ingredients:
2 pcs of eggs (large)
2/3 c of milk (whole)
1/2 c of flour (all purpose)
1/4 tsp of salt
1 lb of lean beef (ground)
6 oz of tomato paste
2 Tbsps of onion (instant minced)
1 tsp of basil (dried)
3/4 tsp of salt (garlic)
1/2 tsp of oregano (dried)
1/2 tsp of salt
1/4 tsp of pepper (black)
1 c of creamed cheese curd (Cottage cheese)
2 c of shredded cheese (Mozzarella)
1/4 c of grated cheese (Parmesan)
Instructions:
Preheat the oven (375 degrees F). Combine milk and eggs inside a bowl then add salt then flour; beat till smooth. Slightly grease a 9 inch skillet above medium-high heat and pour one-third cup of batter.Cook till golden and turn to cook on the second side; make four pancakes.
Cook the beef on a skillet till browned then add paste, basil, onion, salts, pepper, and oregano. Place a pancake onto the base of a 10 inch pie dish, spread quarter cup of cheese curd, quarter mixture of meat, half cup of Mozzarella, and a tablespoon of Parmesan. Repeat the layering and end with the cheese.
Place inside the preheated oven and bake for 30-35 mins.
