Indian Corn Casserole Recipe

Ingredients:

2 lbs of lean beef (ground)
1 Tbsp of oil (vegetable oil)
2 pcs of onions (medium); chopped
3 pcs of garlic cloves; chopped
1 Tbsp of powdered chili
1 tsp of crushed pepper flakes (red, dried)
4 pcs of sweet corn (ears)
28 oz of canned tomatoes (diced)
1 c of broth (beef)
2 Tbsps of cornstarch

Instructions:

Saute the beef on a skillet till browned then add garlic, onions, crushed pepper flakes, and powdered chili; cook for 3-4 mins, while stirring constantly till onions become tender.

Combine cornstarch and broth; mix thoroughly till smooth then add onto the skillet along with the tomatoes. Continue to cook till mixture becomes thick and boiling; stir occasionally.

Remove the niblets in the sweet corn ears then add onto the skillet. Cut the rest of ears to an inch slices then add onto the mixture.

Let it simmer for 20-25 mins, covered, till corn has cooked through. Season salt & pepper.
Garnish (green) peppers and serve together with a mashed potato(es).
