Impossible Mexican Fiesta Casserole Recipe
Ingredients:
1 lb of lean beef (ground)
Salt & Pepper (to taste)
1 c of shredded cheese (Cheddar)
1 c of sour cream (dairy)
2/3 c of mayonnaise (or salad dressing)
2 Tbsps of onion; chopped finely
2 c of baking mix (buttermilk biscuit)
1/2 c of water
1-3 pcs of tomatoes; sliced thinly
Paprika
3/4 c of bell pepper (green); chopped
Instructions:
Preheat the oven (375 degrees F) and grease 13×9-inch baking dish. Cook meat on a skillet, while stirring constantly till browned; drain the fat off. Season salt & pepper on meat; set on the side. Combine mayonnaise, onion, cheese, and (sour) cream; mix thoroughly then set on the side.
Combine baking mix with water; stir thoroughly till formed to a dough; pat it onto prepared dish and press firmly on the base and on its sides by half inch. Layer meat, slices of tomato, and bell pepper; spoon over mixture of mayonnaise then sprinkle paprika.
Bake inside preheated oven, uncovered, for 25-30 mins till edges become slightly brown. Let it cool for 5 mins and cut to squares.
