Hush Puppy Chicken Casserole Recipe
Ingredients:
8.5 oz of muffin mix (corn)
1 Tbsp of chili (powder)
2 Tbsps of oil (olive oil)
16 oz of canned beans (oven-baked)
14.5 oz of canned tomatoes (stewed, undrained)
1 Tbsp of barbecue sauce (smoky-flavored)
1/4 tsp of dill (weed)
1 Tbsp of maple syrup
14.5 oz of canned beans (green); drained
4 pcs of chicken breast fillet halves (skinless); cut to 1/2 inch chunks
Instructions:
Preheat the oven (400 degrees F). Prepare one-half of muffin mix then set on the side. Sprinkle powdered chili on the chicken; cook them on a non-stick pan above moderate heat till opaque. Add oven-baked beans, (barbecue) sauce, and tomatoes; stir them well and add dill and (green) beans.
Let it simmer for 5-10 mins. Spray nonstick cooking spray on a 13×9-inch casserole. Transfer the chicken mix on the coated dish and dot the batter of muffin above. Bake inside preheated oven for 20-25 mins or till golden. Take out from the oven then brush it with the (maple) syrup.
