Herbed Shrimp and Feta Casserole Recipe
Ingredients:
2 pcs of eggs (large)
1 c of yogurt (plain)
1 c of evaporated milk
1/3 c of parsley (fresh); chopped
3 oz of crumbled cheese (Feta)
1/3 lb of shredded cheese (Swiss)
1 tsp of basil (dried)
1 tsp of oregano (dried)
4 pcs of garlic cloves; chopped finely
1/2 lb of cooked pasta (angel hair)
16 oz of salsa (mild, chunky)
1 lb of shrimp (medium, uncooked); peeled
1/2 lb of shredded cheese (Mozzarella)
Instructions:
Preheat the oven (350 degrees F). Spray a nonstick vegetables spray on an 8×12-inch casserole. Combine eggs, yogurt, milk, Swiss cheese, Feta cheese, basil, parsley, garlic, and oregano inside a bowl; mix thoroughly. Spread one-half of pasta onto the base of the dish then cover salsa on top; add one-half of shrimp then spread over the rest of pasta.
Spread over the mixture of egg then add the rest of shrimp. Spread Mozzarella on top. Bake inside preheated oven for half an hour. Let it stand for 20 mins then serve.
