Harvest Potato-Vegetable Casserole Recipe
Ingredients:
4 lbs of potatoes (rinsed clean); peeled and sliced to 1/8 inch thick
1-1/4 tsps of salt
1/2 tsp of pepper (black)
3 pcs of peppers (yellow); sliced to 1/2 inch wide
1 lb of tomatoes (plum, ripe); sliced into 1/4 inch thick
1 tsp of rosemary leaves (fresh); chopped
1/2 tsp of oregano leaves (dried)
4 pcs of garlic cloves (large); minced
1/4 c of oil (olive oil)
1/4 c of shredded cheese (Parmesan)
Instructions:
Preheat the oven (400 degrees F). Grease a shallow 4-qt casserole. Layer one-third of potatoes, one-third of salt & pepper, one-half of peppers & tomatoes, one-half of herbs & garlic; do the layering again with the potatoes on top, and salt & pepper.
Carefully drizzle over quarter cup of oil. Place inside preheated oven and bake for one hr. Sprinkle over cheese and continue baking for another 5 mins. Let it stand for 10 mins then serve.
