Green Chile Sole Casserole Recipe
Ingredients:
1 lb of mushrooms; washed
2 Tbsps of butter (or olive oil)
1/2 c of onion; chopped
7 oz of canned chiles (green, diced)
2 Tbsps of flour (all purpose)
3/4 c of fat-skimmed broth (chicken)
1/2 c of sour cream
1 Tbsp of juice (lime)
1 lb of sole fish fillets; rinsed
Salt
Instructions:
Trim then discard the discolored stems from the mushrooms then slice them thinly. Stir the mushrooms with a tablespoon of butter on a skillet above medium-high heat till browned, or for 12-15 mins. Spoon onto a 1.5-st shallow casserole.
Add the rest of butter, chiles, and onion onto the skillet; stir occasionally till onion becomes limp, or about five mins. Add the flour and mix thoroughly; add the broth and stir thoroughly. Place on the blender; blend till pureed then place back on the skillet.
Add (sour) cream then stir till boiling. Take out from the heat then add the juice. Arrange the fish above the mushrooms inside the casserole; cover sauce on them. Bake (400 degrees F) for 12-15 mins. Season salt.
