Farmer’s Casserole Recipe
Ingredients:
3 c of hash browns (frozen); thawed and shredded
3/4 c of shredded cheese (Monterey Jack with jalapeno peppers)
1 c of fully-cooked ham (or Canadian bacon); diced
1/4 c of scallions; sliced
4 pcs of eggs; beaten
12 oz of milk (regular or evaporated)
1/4 tsp of pepper (black)
1/8 tsp of salt
Instructions:
Butter a 2-qt square ovenproof dish then arrange the potatoes on the base evenly. Sprinkle ham, scallions, and cheese. Combine salt, pepper, milk, and eggs; mix them well and pour onto the dish. Cover and place inside the refrigerator for some hrs or over a night.
Bake inside a preheated oven for 55-60 mins. Let it stand, at about five mins then serve.
