Enchilada Squares Recipe
Ingredients:
38 oz of canned enchilada sauce (Las Palmas)
1 lb of shredded cheese (Monterey Jack)
1 pc of onion (medium); chopped
4 oz of canned olives (sliced)
1 lb of beef (ground)
1-1/2 c of oil (vegetable oil)
1/2 tsp of salt
1/2 tsp of pepper (black)
1/2 tsp of garlic (powder)
1/2 tsp of onion (powder)
27 pcs of tortillas (corn)
Instructions:
Brown the beef then drain. Add garlic, onion, salt, and pepper. Heat the enchilada on a saucepan. Heat the oil on a skillet. Cook tortilla for a minute on each side, don’t make them crispy.
Place the tortilla on heated sauce, at about 2 mins then place on a greased 9×13 inch pan. Do the same process till the layer is done, with nine tortillas.
Place one-half of meat, one-third of cheese, olives, and onion. Do the same process again with the tortillas, then meat and tortillas as the top layer.
Spoon over the remaining sauce then add the remaining onion, olives, and cheese. Let it cook then cover with aluminum foil; place inside the refrigerator.
Bake (350 degrees F) for 30 mins till cheese has melted.
