Eggplant Casserole Supreme Recipe
Ingredients:
1 pc of eggplant (large); chopped to small pieces
1 pc of onion (large); chopped
2 pcs of garlic cloves; chopped finely
2 Tbsps of margarine (or butter)
2 lbs of beef (ground)
1 pkg of noodles (rotini)
1 jar of spaghetti sauce (large)
1/4 c of cheese (Parmesan)
1/4 c of cheese (Mozzarella)
Instructions:
Brown the meat the drain; set on the side. Saute the eggplants with onions on margarine till eggplant becomes soft and the onions become translucent. Add garlic and cook it for 5 mins. without burning.
Combine meat and mixture of eggplant; cook them for 15 mins above moderate heat then add (spaghetti) sauce. Mix thoroughly.
Cook the noodles according to its package instructions; drain. Add Parmesan onto the sauce and noodles; mix thoroughly and transfer on a 13×9-inch baking dish.
Bake (350 degrees F) for 60 mins. Take out from the oven then add Mozzarella. Bake again till Mozzarella melts.
