Eggplant Casserole Recipe
Ingredients:
1 pc of eggplant (1.5 lb); sliced to 1/2-inch thick
6 Tbsps of butter (unsalted)
2 pcs of onions (medium); sliced
3 pcs of tomatoes (fresh); sliced
or
1-1/2 c of tomatoes (canned)
1 c of cheese; grated
1 tsp of salt
Pepper (to taste)
1 c of breadcrumbs; crushed finely
Mushrooms
Instructions:
Peel eggplant slices and cut to dices. Saute them on butter for 5 mins. Place on a greased casserole in alternating layers along with onion slices, tomato slices, and cheese then season on each of the layers.
Spread breadcrumbs and cheese on top. Bake (375 degrees F) for 35 mins.
