Dinner in a Pepper Recipe
Ingredients:
8 green bellpeppers (large)
1/2 c of onion; chopped
3 peeled tomatoes (medium); chopped
1 can of cream style corn (8 oz)
3/4 tsp of crushed dry basil
3/4 c of softened crumbs of bread
1 lb of beef (ground)
1 can of whole-kernel corn (8 oz); drained
1 tsp if salt
A dash pepper
1 Tbsp of melted butter
Instructions:
Trim bellpeppers’ top then discard the membranes & seeds. Have enough tops chopped to have 1/4 c then set it aside.
You cook the whole green-peppers in rapidly-boiling water about 5 mins, drain. You sprinkle the insides lightly w/ salt.
Cook onions, beef, 1/4 c chopped green-pepper in large skillet ’til meat browns & onions are tender. You add the tomatoes then simmer for 4 mins ’til cooked. Drain excess liquid.
You add the corn, salt, cream style corn, pepper & basil into skillet, then mix thoroughly. Carefully stuff the peppers w/ meat mix.
Combine crumbs w/ butter then spread evenly over peppers. Put them in 13×9x3″ bake dish then have it baked w/o cover for 35-40 mins at three hundred fifty degrees Fahrenheit.
