Corn and Green Chile Casserole Recipe
Ingredients:
2 beaten eggs (large)
1/2 c of cornmeal (yellow)
1 tsp of salt
8 oz of shredded cheese (Monterey-Jack)
1 c of low-fat sourcream
6 Tbsps of melted butter
2 c of fresh whole-kernel corn
1 can of diced chiles (green, 4 oz)
Instructions:
Prepare the oven. Have it heated to three hundred fifty degrees Fahrenheit. Combine eggs, sourcream, cornmeal, salt & butter in bowl. Add in the chiles, corn & cheese.
Pour into greased 2-qt casserole. Have it baked for an hour.
