Company Casserole Recipe
Ingredients:
2 Tbsps of oil (olive)
2-4 garlic cloves (large)
1 can of crushed tomatoes (28 oz)
1 Tbsp of dry basil
1 lb of lean beef (ground)
1 can of tomato-paste (6 oz)
1 tsp of dry leaf of oregano
A small bayleaf
8 oz of softened creamcheese
1/4 c of sourcream
1 c of cottage-cheese
1/3 c of thinly-sliced onions (green)
2 Tbsps of oil (olive) plus 2 tsps
1/2 lb of dried spaghetti noodles
Instructions:
Tomato-sauce layer: Have 2 Tbsps of oil heated over mid-heat in saucepan. You add the beef, break into smaller pieces. Stir occasionally ’til browned.
You add the onions & garlic then saute them ’til onions are transparent. You add the tomato-paste, tomatoes, bayleaf, oregano & basil.
Cover w/ pan-lid ajar & allow some of its steam to escape. Let it simmer for 30 mins-3 hrs as desired, adding more water as necessary.
Have the bayleaf removed. Cook spaghetti following package instructions, add 1 Tbsp of oil into water that’s boiling. Have them cooked ’til al-dente then drain.
Mix creamcheese, sourcream & cottage-cheese together inside processor ’til smooth & combined well. Add the green-onions.
Grease one 2-qt casserole w/ 2 tsps of oil. You preheat the oven into three hundred fifty degrees Fahrenheit.
You assemble the casserole, add 1/2 noodles into casserole then drizzle w/ 1/2 Tbsp of oil, then top it w/ 1/2 creamy-cheese & onion mix, add 1/2 tomato-sauce.
Do the same procedure to create more layers then end w/ tomato-sauce. Poke a knife slowly into casserole layers in 4-6 areas then wriggle around & allow some tomato-sauce to seep through.
Have it baked w/o cover for half an hour.
