Chinese Cashew Chicken Casserole Recipe
Ingredients:
1-2 Tbsps of extra-virgin oil (olive)
1 c of finely-chopped celery
1/2 c of green bellpepper; finely-chopped
Salt
Pepper
A can of cream-of-mushroom soup
1 c of whole & broken nuts (cashew)
2 lbs of skinless & boneless chicken; chunked
1 c of carrots; grated
1 Tbsp of chopped tarragon (fresh)
5 oz of Chinese-style noodles
1/2 c of chicken stock
Instructions:
Heat oil in skillet placed over mid-heat then you add chunks of chicken & cook ’til bit browned. Remove chicken pieces from pan then transfer into bowl.
Add onions, celery, carrots, tarragon & bellpepper, toss gently to coat well, then season w/ pepper & salt,
Mix soup & chicken stock in separate bowl. In casserole,, place one noodles layer then you add one-half of chicken mix. Pour one-half of soup-broth mix all over.
Top w/ another noodle layer then chicken mix & remaining soup-broth mix. Sprinkle w/ cashews then have it baked for 45 mins at three hundred fifty degrees Fahrenheit.
