Chile Pepper Casserole Recipe
Ingredients:
8 large whole poblano bellpeppers
4 onions (green); sliced
2 c of milk
1/4 tsp of salt
Fresh leaves of cilantro; chopped
1 c of shredded sharp cheese (Cheddar)
4 large eggs
2/3 c of flour
1 c of shredded Monterey-Jack cheese
Instructions:
Have the peppers roasted ’til skin will blister. Peel skin off. Remove the seeds & stems. Cut them into half lengthwise then remove the pith.
You spread these chiles into greased 9×13″ bake dish in one layer. Sprinkle w/ cilantro, onions & cheese (reserve some cheese for topping).
Beat the eggs, flour, salt & milk together ’til smooth. You pour this over cheese & chiles.Have it baked for about 40 mins at three hundred twenty-five degrees Fahrenheit.
Sprinkle rest of cheese all over your casserole then return it into oven for ten more minutes or ’til cheese will melt. Set aside for about 5 mins before you serve.
Best when served w/ salsa.
