Chicken Tortilla Casserole Recipe
Ingredients:
2-3 whole chicken-breast
1 chopped onion
1 garlic clove
2 c of grated cheese (Monterey-Jack)
A can of cream-of-mushroom soup
A can of cream-of-chicken soup
15 corn-based tortillas
A can of chicken stock
A can of green-chiles (small); chopped
Instructions:
You cook the chicken w/ water ’til tender. Have the skin removed. Shred or cut chicken into bite-size pieces. You mix the chiles, onions, soup & stock together w meat in large saucepan.
Let it boil and then you remove the pan from the heat. You cut the tortillas carefully into one-inch pie-shaped pieces. Then you layer the tortillas, chicken-soup mix & cheese in alternate fashion to create six layers inside a casserole.
Have dish baked w/o cover for 45 mins at three hundred fifty degrees Fahrenheit.
